General Manager:
Jan-Karl Schiebe
Jan-Karl Schiebe was born and raised in South Africa, speaks four languages and has spent all but 5 years of his life in South Africa. He received his formal training through Steigenberger Hotels in Germany, having furthered his career through working in Orient Express (Fancourt Hotel and Country Club Estate), Sun International (The Table Bay) and Protea Hotels (President Hotel). He also worked at various other food and beverage outlets in Germany and South Africa. January 2009, he was appointed as General Manager of Paulaner Brauhaus at the Waterfront in Cape Town, South Africa.

Head Chef
Frank Dammert
Frank Dammert started his career doing his apprenticeship in the Holiday Inn Hotel in Sindelfingen, Germany. From their he left Germany to work for Club Med in New Caledonia, Bali and Mauritius, the Carlton Hotel in Johannesburg, the Maritim Hotel in Stuttgart Germany and the Fine dining Industrial Club of the Dekra “Kecks Klub” and also Stuttgart. In 2003 he moved back to South Africa where he took on the position of Executive Chef at Paulaner Brauhaus Restaurant.

Brewmaster
Wolfgang Ködel
Our brewmaster, Wolfgang Ködel, studied the art of beer brewing in Germany and has opened breweries in Singapore and China.
